March 22, 2017 Potato Pancakes

Tonight I made potato pancakes. I usually like to make scrambled eggs and have a cup of coffee with my potato pancakes, but I chose to go with sour cream and chives as my topping tonight. Here is the recipe.


  • 8 medium sized potatoes
  • 1 cup of shredded cheddar cheese
  • 1/4 cup of flour
  • 1 tablespoon of garlic powder
  • 1 tablespoon fresh ground black pepper
  • 1 tablespoon of salt
  • 2 eggs
  • 2 to 3 diced green onion
  • 1/3 cup vegetable oil


Peel and shred potatoes. Squeeze out as much water out of the potatoes as you can. Mix together potatoes with all ingredients listed above in a stand mixer or by hand.

Pour vegetable oil into frying pan on stove top and use medium heat. Allow oil to heat up. You should start to see it bubble a little bit.

Use a cookie scoop and scoop out potato mixture and place it on the oil. Flatten the potato mixture with the backend of a pancake flipper. Let cook until edges are golden brown and flip. Cook other side until golden brown.
