March 19, 2017 Salad with Grilled Chicken and Homemade Dinner Rolls

Tonight I made a traditional salad with ice berg lettuce, tomatoes, cheddar cheese, bacon bits and croutons. I topped it off with some grilled chicken and made some homemade dinner rolls.

Here's the recipe for the dinner rolls:


  • 3 cups of flour
  • 1/2 cup whole milk (warm it up in microwave)
  • 1/2 cup of water (warm it up in microwave)
  • 1 package of active dry yeast
  • 1 Teaspoon of sugar
  • 1 Teaspoon of salt
  • 1/4 cup of shortening
  • 1 egg

Mix everything together in a mixer or by hand in a large bowl. Add flour as needed to make the dough a little sticky, but able to handle with your hands. Knead the dough for a few minutes and place it in a bowl and cover it with a towel. Place it in a dark place and let rise for about an hour.

You can choose to make a salad on your own or buy it prepackaged. I used 100% natural frozen grilled chicken breasts and heated it up in the frying pan for about 10 to 15 minutes. I then cut the strips into small cubes.
